Meet Jim

Jim has been with Creative Printing over 15 years and he's our Pressman Extraordinaire. That's not just a job title. Jim really is extraordinary.

Creative Printing of Bay County, Panama City, Florida - Pressman - Jim On the job at Creative, Jim's been known to do the work of three men without batting an eyelash. He's quiet and dedicated and we always know we can rely on him to show up and just do what he does.

A number of years ago, Jim got into a tangle with one of the presses—literally. One hand was pulled into the rollers, wedging three of his fingers and trapping him. How did he react?

He hollered for help and his co-workers surrounded him. They were frantic and upset. Jim kept calm and steady, giving instructions to his co-workers to bring him this tool or that and he worked to free himself from the machine, just in time for the ambulance to arrive.

“Don't panic. Panic is the worst thing you can do,” says Jim.

Although he ended up with stitches and can now sometimes predict the whether by the tight feeling in his fingertips, Jim has no reservations about continuing to work with the machine. In fact, he maintains that the accident could have been much worse if he worked with the larger presses that require 2 or more technicians to run them. He prefers the smaller machines that just nip at you once in a while.

Jim loves printing so much that he started his own business out of his home, using a vintage letter press to do meticulous jobs like sequential numbering for forms and invoices. He also does die-cutting, which is the process of cutting shapes from pre-printed materials, such as the hole and slit at the top of a “do not disturb” door hanger.

Jim does this work on top of his full-time hours at Creative Printing, making him perhaps the busiest printing professional in Northwest Florida. His father was in the printing business and Jim came into it as a teenager, cleaning and doing off jobs in a print shop, so he says it's just in his blood. But Jim understands that some people don't get

“Find a challenge every day,” says Jim. Years ago, Jim started to learn how to maintenance and repair the printing presses in addition to running them, which gave him an additional challenge to meet. He says it also gives him more control. By working with small machines that he can run alone, and understanding how they work, Jim is able to work most efficiently. This must be why his co-workers say he does the work of three pressmen.

Although Jim loves his printing work, he also has a passion for music. He loves classic rock like Led Zeppelin, Pink Floyd and Santana. He also plays guitar (a little like Neil Young, he says) and wishes he had a little more free time to dabble in song writing or perhaps join a band.

Jim also looks forward to traveling more outside of Florida. Although he squeezes in an occasional trip to Biloxi to lose some money at the casinos, he wants to see more. Two destinations he has in mind? California and Germany.

Jim is certainly famous for his cool temper, quiet demeanor, and strong work ethic. There's one other key thing that makes him famous—and, at Christmas time, very popular: his smoked mullet dip. Every year, Jim makes the dip that others describe as “totally amazing” and “addictive.”

Jim's a generous guy, so he volunteered to share the recipe:

Jim's Smoked Mullet Dip

Yield: A mess load

  • 5 mullet
  • 2 packages cream cheese
  • 16 oz sour cream
  • ½ packet onion soup mix
  • garlic powder (to taste)
  • About ¼ small bottle of hot sauce
  1. On a charcoal grill, grill the mullet until cooked completely. Jim suggests adding pecan or oak wood chips for an extra layer of flavor.
  2. Allow the mullet to cool before deboning and shredding the meat. You can save time by buying deboned mullet filets, if you can find them.
  3. Mix the mullet with all the remaining ingredients, except the hot sauce.
  4. Add the hot sauce a little at a time up to ¼ bottle, tasting the mixture until the desired heat level is reached.

Although mullet is the original star of this recipe, Jim notes that you can make it with almost any fish you like. He's had good results with snapper in particular.
